I assume you need to be at the airport 1 - 2 hours in advance or so, but you best get that info from your airline. Anyway, you need to be there pretty early so I would personally prefer to get an hotel nearby. Please check this list of hotels near the airport, some even offer free transfers to the airport. The timetable shows all the options to get from Interlaken to Zurich airport.
