Welcome simran! Lucerne is a better location for day 1, 2 and 3; Interlaken is easier for day 4, 5 and 6. So you might spend the first few nights in Lucerne and the other ones in Interlaken. If you do want to stay in one hotel only, your traveling time for some trips will be longer (I'm not sure whether that's preferable with a baby). You can consult the timetable

A rail pass will help you to save money. You may want to look into a 3 or 4 day Swiss Saver Flexi Pass
. You would use free travel days for day 1, 2, maybe 3, and 6. On the remaining days, you'll get a 50% discount.
By the way, the chocolate train would be quite far away from both Interlaken and Lucerne. You could visit the (smaller) chocolate demonstration at the open air museum in Ballenberg near Brienz (from Interlaken), or get to Shoggiland in Flawil (from Lucerne).
