Hi there - I will be traveling from Paris to Switzerland in July.
Not sure yet where to start my exploration of Switzerland (note: travel arrangement to Switzerland has not yet been made but will likely take the train).

I'll only have 5 days and want to focus on seeing the incredible mountains and beautiful lakes. I hope to do some hiking as well (nothing too tough). I had been thinking of starting with Interlaken, then heading to Lucerne, before finishing in Zurich. What do you all think?

Should I focus my time elsewhere and hit different spots? If so, where and do you have suggestions for specific hikes / free or cheap activities? I sincerely appreciate your suggestions and tips. Thank you!

Sounds about right on your plans. Look at the activity options we recommend on those towns here:

I wouldn't focus much on Zurich if your aim is to see mountains and lakes etc. Just use it as your exit town if that was your plan. I'd be tempted to stay in 1 town and explore from there or split between Lucerne and a town like Lauterbrunnen or Wengen (both near Interlaken which is the biggest but least interesting town in the area).

Be sure to use the Swiss railways timetable to plan out all your trips around the country.
