Hi GPelatti,
Welcome to MySwissAlps! Adelboden is situated at the end of a valley and can be reached by bus or by car. Once there, the options by car are very limited. The village is surrounded by mountains and most areas are only accessible on foot, by cable car or by bus. A few places like the parking lot at the end of the Engstligenstrasse can be reached by car. From there you would take the cable car up to the best hiking area: http://www.myswissalps.com/hi king/engstligenalp. Or you can walk up along the waterfall: http://www.myswissalps.com/hi king/engstligenalp-unterdembirg.
There also are hikes across the mountains to other valleys. The one across the Hahnenmoospass to Lenk might be accessible in June. You’ll end up in another valley, so a car is not useful. You’d take public transport back, or you can walk back or partly take cable cars.
You can start hiking right from the village, but in reality it’s useful to start higher on the mountain at least in some occasions.
A car will mostly stay put in the parking lot. Actually that’s how we usually do our day trips in Switzerland: not by car, although we do have one. As you have to rent one I’d reconsider if that’s worth it. It might be if you intend to visit other regions while there. This page might be helpful: http://www.myswissalps.com/ca rversustrain.
