Hiking in December isn’t an option unfortunately due to snow in the mountains. Snowshoeing perhaps in the Jungfrau region. Tourism Interlaken may have details on that: http://www.interlaken.ch/en/d iscover-interlaken.html or contact them directly to inquire.
There are some hiking/walking paths around Interlaken or nearby villages if that is more what you are looking for? http://www.myswissalps.com/in terlaken/activities

Thanks for your tips. But because she will be alone – would there be any organised ones that she can join?
Although she is an ardent hiker in Korea and Japan (where she was on exchange) and even in Hongkong – but it is always with some other people.

Well the hikes listed there aren’t “hikes” per se. They are more like walking trails, low enough in elevation that they will be accessible (walks between low lying villages for the most part) and aren’t mountain hikes.
If she is an experienced hiker then those trails may be disappointing for her but you are limited in December.
As I said, mountain hikes aren’t possible for the most part in the winter. You could check with Interlaken Tourism for group snowshoeing trips though.
