Is there a separate guided tour ? I thought its all inclusive in the entry ticket
Both these factories provide you audio guide which can be pointed to marked areas to listen to informative description about the process and other related stuff.
At Gruyeres, there are screens playing informative videos in loop and you can hear the voice over on the audio player provided to you.
Almost similar experience at Broc.
Entries to both these factories are covered on Swiss Pass so I am not sure if there is any additional charge for the audio guides.
On your question about making/tasting, Gruyeres provides you 3 cheese samples of various aging while Broc provides you unlimited chocolate tasting in their tasting room.
No making experience at either place

On the myswissalps site, there is a tour of both done by an external party. So that’s why I was a bit confused.

If you plan visiting the places individually there’s no need to book a tour, simply use your Swiss Travel Pass:
