Lutry is indeed beautiful! There is a walking suggestion here (note this is not really a hike, as the walk is very easy!) http://www.myswissalps.com/hi king/lutry-epesses but you can in fact go from Lutry to St Saphorin which takes 3 hours 15 mins.
If you don’t feel like walking, you can take the Lavaux Panoramic train which includes vineyard visits: http://www.lavaux-panoramic.ch

Indeed, however the regional train doesn’t get close up and personal with the vineyards 😉
I have found with a number of visitors through the years that it is a good way for them to experience the vineyards without having to walk if their fitness levels are limited.
I also loved how they include a tour through a cellar and explanation of how the wine is made, as well as a wine tasting!
Personally though I prefer the “caves ouvertes” / hiking alternative haha.
