1. Train : Munich Hauptbahnhof dep. 17:33 ; Interlaken West arr. 23:55. change at Zurich and Olten. There is a faster way, dep. same time, change at Zurich, Bern and Spiez; from Spiez ride by bus and arrive Interlaken 23:34. Try to be able to leave Munich earlier. Check out all-bus options on rome2rio.com. No reservations needed.
2a. Yes, the Jungfrau train operates on these dates. You will ride from Interlaken to Zweilütschinen by bus due to maintenance works on that section of the railway line.
There is no “interesting places” as such. Only interesting places to Swisstrotter, and we don’t know your tastes.
Don’t worry, you’ll have a good time!

I see your point to leave Munich asap as otherwise we would be arriving at Interlaken very late.
Looking forward to my introduction to Switzerland and the Alps !

I have one more question – would travelling to Interlaken from Munich by bus be a good idea rather than by train ?
I am really looking for this opportunity to visit Switzerland – although a short trip – but with the experience I would gain, I would like to visit again with my family next summer !

Bus is usually cheaper, and slower. Not a good idea in your case.

I think the train is more comfortable than the bus, I suggest to take the train. But it is up to you, you can choose any of them. Have a look at http://www.myswissalps.com/tr aintickets/germany too.

Why take the bus.. a slower route…when your time is precious on a short trip? Do you really want to save the money, and see less of Switzerland?
