We will be flying into Zurich and plan to take a local train directly to Chur, spend the night in Chur and catch the Bernina Express in the morning. We would like to get off of the Bernina Express if we find a town along the way that we would like to hike in. I saw on the Bernina Express website it lists 8 towns. Are they the only towns that we can stop at on the Bernina Express or can we get off the train in say Pontresina, spend the night and get back on the Bernina Express the next day and take it to Turin (Torino)?

The Bernina Express requires seat reservations. If you break the journey anywhere you would need two reservations. You can do the same route on regular trains. In that case you can hop on and off to your hearts content and reservations are not even possible.

The BEX from Pontresina to Tirano with connection through to Turin is around a 7 hour ride.
