Reservations are not possible on internal main line trains in Switzerland.
The opposite applies on the direct Eurocity (EC) trains Switzerland – Italy. Reservations are obligatory for international cross-border journeys on these EC trains.

If reservations are possible but not mandatory you will see a letter R alongside the journey on the SBB Timetable. If reservations are mandatory the R will be in a box. If neither of these codes are present reservations are not possible.
Reservations on trains in Switzerland are very rare. I once reserved seats on the Luzern to Interlaken Express. My wife and I found we made up 40% of the passengers in the carriage but that was mid-May. Things get a bit more crowded in peak tourist seasons.

We plan to travel in August and are concerned about having seats as we will have carry-on luggage and will be travelling over a period of days. We had also hoped to be able to sit together. How likely would this be during this busy month?

If you travel 1st Class the chances of getting seats should be pretty high.
The SBB on-line timetable has a predictor for how busy any train is likely to be. 3 red figures = choc-a-bloc. Rare to see that in 1st.

My holidays with my wife are always in August and we never have a problem.
Remember August is actually quite late for many European tourists – many have already gone home by mid-August
