I recommend the RegioExpress Lötschberger for your trip: http://www.myswissalps.com/lotschberger. Take the train from Zermatt to Brig and change there to the RegioExpress Lötschberger. From Spiez take the train to Interlaken.
Make sure to have a Swiss rail pass. If you need help with choosing one, let us know.

Good to take RegioExpress Lötschberger from Zermatt upon check-out and go to my next destination which is Interlaken? How long is the ride to interlaken using this train? Can i bring along my luggage?

Brig – Spiez takes 1-1,5 hrs by the RegioExpress Lötschberger. (Use Kandersteg as via station in the timetable).
Spiez – Interlaken is about 20-25 mins by train.

If you mean 5 hours total ride, then that is 2.5 hours out and 2.5 hours back.
If you do mean that, then honestly it is not worth the bother (extra money, the stress of getting a reservation etc) of taking the Glacier Express. 2.5 hours would not get you even as far as Andermatt, and you would be riding the least interesting section of the so called Glacier Express route.
If you want a ride from Zermatt along the same route, just take the local MGB (Matterhorn Gotthard Bahn) railway trains and hop on and off as you wish.

If you are in Zermatt, I recommend Gornergrat and Klein Matterhorn or Sunnegga if the cable way is operating.

You can travel via the Glacier Express to Andermatt and back via local trains, so you have to reserve your seats just once (on the Glacier Express), so you can save money and try the Glacier Express also.
Or, if you have more time, you can travel to Interlaken as follows: Zermatt – Andermatt (Glacier Express), Andermatt – Göschenen (cogwheel train), Göschenen – Lucerne (Gotthard Panorama Express), Lucerne – Interlaken (Golden Pass). In this case I recommend a stop and overnight somewhere on the route, like in Andermatt or Lucerne, so you do not have to travel all day long.

Visiting Jungfrau will be one of them.

If you’re visiting in December, you should definitely check out the Christmas markets. From Interlaken you can also plan day trips to Lauterbrunnen and visit Schilthorn, or explore the mountain villages of Wengen, Grindelwald and Murren. You can also plan a day trip to Lucerne using the Golden Pass route.
