There are trains running to Milan from Zermatt after 18:00. You can search for them on the Swiss railways timetable here.
For your itinerary, I would compare the Swiss Travel Pass to the Swiss Half Fare Card.
The Swiss Travel Pass is the most convenient (usually you don't have to buy any more tickets for trains, just show the pass as it covers most trains in Switzerland).

The Swiss Half Fare Card gets you 50% off all trips you take.

Oh, and there is no cable car on the Matterhorn. You can take a cable car up Klein Matterhorn for great views of the Matterhorn though!
