Hi Ari,
Your voucher for Jungfraujoch is probably valid from Interlaken but you can redeem if for a ticket at a station before then as well.
I would go down the different route than you went up. (up via Grindelwald and down via Lauterbrunnen for example).
Slowpoke gave a you some great links for ideas on what to do in the area. You can also check in with the local tourism office and see what they suggest for hikes – all should be open now.

In particular, note the use of the “via” entties to direct the computer to routes other than the default which is the fastest
