Zermatt to Varenna via Chur train options

Hi All,
We are doing a 7 day guided Alps hike (from La Chable to Zermatt). Our original plan was to spend 2 days in Zermatt afterwards looking around the old town, maybe going on a cable car etc. Then we were intending on catching the Glacier Express to Chur, spending another 2 nights there before getting the Bernina Express to Tirano where we will be continuing our trip through Italy.
We are now rethinking after doing a bit more research, and wondering whether we really do want to do both Glacier and Bernina trains – I am sure the scenery is incredible, but we will have been high up in the Alps on our hiking tour plus we will also have been in Lauterbrunnen for a week prior to that.
If we were to catch the ‘normal’ train from Zermatt to Chur instead of the Glacier Express, is there any benefit to this – would it be cheaper/quicker?
We are also wondering whether we should consider spending more time in Zermatt to see it properly, and just staying overnight in Chur rather than splitting time between both towns and just skimming over the highlights. What are people’s thoughts on this?
Is there any other options to get us from Zermatt to Chur (so we can catch Bernina Express), perhaps getting normal train and stopping at another nice village overnight on route to break up the long trip?
