Hi Pyrolator –
Welcome to the forum.
<<“Firstly apologies to all the very experienced hikers”>>
Apologies are not needed. Switzerland has hiking on marked trails for all skill and fitness levels.
In German – die Wanderwege. Literally translated- the wander ways..
<<” myself and my wife areconsidering a Summer walking holiday for the first time (ever…) andthought Grindelwald looks good. We are only looking for easy to moderatewalks (both of us are OK fitness-wise and in our 50s). Are there anyother towns we should be considering do you think?”>>
Only a couple of hundred other towns. 😉
Grindelwald is an excellent choice, however.
You can expand on that location, all around the Jungfrau region, since local public transport is so good .. When in the Summer will you go, by the way….could make a difference. How long?
Here are a few ideas to broaden your options:

A bit extreme unless you are an expert –

Seriously- you can hike on marked trails ranging from easywalks to technical climbing in Switzerland.
Here is a good source for the Jungfrau region, by a forum member who likes Wengen:
