Your son doesn’t need any tickets with a valid Swiss Family Card no.
If you want the freedom of just being able to hop on any tram, bus, boat or train for the day I would lean towards a ZVV day pass. Getting up and down to Uetliberg will probably get you to break even on its own.
The zones will depend on where you go. For Uetliberg you need three zones (Zurich downtown counts as two). If you take a longer boat cruise you will need more zones.
