Hi gjord001, welcome to MySwissAlps!
For a scenic ride to Visp you can consider this route: Zurich to Lucerne, Golden Pass line to Spiez via Meiringen and Interlaken, then a local train to Brig via Kandersteg. Finally a train to Visp. Without breaks, this takes 5.5 hours.

This is what I have so far for the first two days:
Oct 15 – Zurich to Lucerne, stay overnight – Explore Lucerne, maybe take a boat ride on the Lake.
Oct 16 – Golden Pass line to Spiez via Meiringen and Interlaken, then a local train to Brig via Kandersteg. Finally a train to Visp. Check in at the Hotel, take train to Zermatt and spend the afternoon. Train back to Visp.
Would you recommend doing this or adding Zermatt would be too much in one day?

Sounds good, although Oct 16 is a little optimistic. It will only be light around 8 AM so departing earlier than that isn’t really useful. By the time you reach Visp it will be 1:30 PM at the earliest. You won’t be in Zermatt until 3 or 4 PM, and sunset is between 6 and 7 PM. You’d better spend more time in Zermatt on another day if you can.
To make most of your day, you could schedule a break along the way. E.g. in Spiez for a walk to the lake, or in Brig to see the castle. Perhaps you could take a boat from Interlaken West to Spiez or Brienz to Interlaken Ost for an even more scenic ride, but you should check the limited timetable for October.

Zoom in to see train routes. In the menu, under “Points of Interest/Traffic”, turn on train stops.
Then, use the timetable to see how long it would take to get there.

Maybe Montreux would be within reach. Or, you could go up into the old alpine towns and regions toward Andermatt.

I went from Visp to Jungfrau as a day trip. You can also go in day time to Matterhorn Glacier Paradise or Gornergrat
