would there still be snow the first week of May? Could we enjoy this area for some light hiking at this time of year?

The answer always depends on altitude. In May, the higher trails are not really open due to a lot of of snow, and most cableways are not running. However, a walk on the floor of the Lauterbrunnen Valley is a good possibility.

Do you want snow, or do you want to avoid snow? Can't tell from your question. For either one, May is kind of an in between month. Not really good for either at most altitudes.
