There is a boat from Interlaken West at 3.10 p.m. which arrives in Thun at 5.20 p.m (scheduled to be the paddle boat) or one an hour later at 4.10 p.m. You could then get a train or bus back to Interlaken.
From Interlaken Ost there is a cruise on Lake Brienz at 3.07 p.m. arriving in Brienz at 4.20 p.m. and similar an hour later. Again you could return by train to Interlaken.
There is also Harder Kulm reached by funicular from Interlaken Ost which I believe runs quite late – but you would need to check times at tourist office.
The children might like Heimweh Fluh – there is a model railway exhibition you can visit which is fun (has lots of model trains running including a night scene and a commentary) and also a playground area where they could let off steam!. This is in Interlaken West, not far from railway station.

Hi,
You could also take a ferry from Interlaken West in the other direction and visit the Beatus Caves on the northern side of Lake Thun. There is a walk of a few hundred metres from the ferry stop to the caves, but the area is very beautiful, and the caves are quite interesting.

The caves are interesting indeed and the children would certainly like them, but as an elderly person myself, I think the walk up from boat or bus to cave entrance is pretty steep and might be a bit much.

Be aware the Beatus hole closes at 5 pm.
The Trummelfachfalle are a must see when you are around! Easy to combine with Jungfrau or Schilthorn. A visit takes 1,5 a 2 hours.

The falls are amazing, but there are a lot of stairs, admittedly all down hill. If steep terrain is an issue, the Trumellbach may not be a goer.
