It is possible to visit Zermatt in a day from Interlaken, always depending on how long you want your days to be. The journey takes around 2.5 hours one way and is entirely covered by regular trains, which you can use for free with your Swiss Travel Pass.

A day trip to Zermatt to view the Matterhorn is certainly an option. Make sure that at least in one direction between Spiez and Zermatt you go via Kandersteg. You will then travel on the Regio-Express Lötschberger train over the traditional, more than 100 year old mountain route, giving you a wonderful view along the impressive peaks and down into the Rhone Valley. The faster more direct but less scenic route between Spiez and Visp incorporates the lengthy (in distance) but short (in time) Lötschberger Base Tunnel.
