Hello Heidi,
Welcome to MySwissAlps! The Mont Blanc is on the French/Italian border, so you may not get many replies on our website. Personally I don't know the area, but I can provide some general comments: hut to hut hikes are very special as you'll really be in the outdoors for multiple days and can also enjoy sunrise and sunset at wonderful places. Remote areas a easier to reach if you have multiple days without the need to go back to a town. A disadvantage is that you will need to stick to the route once you spend the night in a hut, regardless of the weather. Even more so with a tour. With day hikes, you can adapt your daily plans to the weather and your level of energy. Also you'll have more choice of accommodation. Huts are pretty basic. Mostly dormitory style.
Hopefully someone else can provide more details.
