When paying for point to point tickets at the stations, I assume you can pay in Swiss Francs and by credit card. Can you pay with Euros?

No, you can’t pay with Euros.

Typically SBB rail station offices will accept Euros in person (especially larger stations). But I would always have Swiss Francs as it is the official currency in Switzerland.
