Thought you might.
Don’t know if it will fit your timing, but I might suggest the older upper route from Spiez to Brig then Visp, before proceeding to Zermatt.
Recently, a new “Lötschberg Basis Tunnel” has opened from near Spiez to Visp. It cuts about an hour off the time required for the old route. If you just plug Interlaken (or Spiez) to Visp in the timetable, it will default to that route, because it is the fastest.
However, the scenery inside the tunnel is not very interesting.
If you take the old upper route, via the hourly local train named “The Lötschberger” you get a really scenic ride on both sides of the Alps. South bound, sit on the right.
To see it in the timetable, enter Kandersteg in the “via” box.

There is a hiking trail along the rail line as it descends along the south wall of the Rhone Valley from Hohtenn to Brig. Pictures taken along that trail will relate to some of the images in the “rail fan” video and give some idea of the sights, many of which can be seen from the train (but not all.)
