Interlaken, Zermatt and St.Moritz in 6 days in Dec

Hi,
My wife and I will be coming to Switzerland for 5 nights in early December 2019. Following Switzerland we are going to Venice and on to Florence and Rome.
Places we really wanted to see are;
- Jungfraujoch Area
- Matterhorn
- St Moritz and Bernina Express
Our initial plan was:
Day 1: Fly into Zurich then train to Interlaken (possible stop in Lucerene on the way) – Interlaken overnight
Day 2: Jungfraujoch day trip including surrounding villages as time permits – Interlaken overnight
Day 3: Travel to Zermatt Early morning. Explore Zermatt and Matterhorn – Zermatt overnight
Day 4: Glacier Express to St Moritz
Day 5: Day Around St Moritz
Day 6: Bernina Express to Tirano and on to Venice
We have now noticed that the Glacier Express won’t be running until 14.12 which is the last day of our time in Switzerland so we need to make some changes to our plans and hope you could help.
1. Is the above itinerary too full on or is it possible in 6 days? If you suggest to drop something what would be best to drop off?
2. We thought of possibly dropping Zermatt and stay in Interlaken 3 days and use this as our base. If weather is good we can go 1 day trip to Jungfraujoch and 1 day trip to Zermatt. If weather is bad we could go to Bern or Lucerne.
3. Leave our itinerary as it was initially and just take the less scenic train from Zermatt to St Moritz via Zurich instead?
4. We would like to go on the Bernina Express. Would we be better off to commence our trip in St Moritz or end it in St Moritz also considering we are going to Venice next
5. What are the thought of the overall itinerary? Should we cross of St Moritz and spend more time in Interlaken area and Zermatt only instead?
Note we have not booked the flight into Zurich yet so could also fly into Geneva. We will be coming from Frankfurt.
