It’s designed for tourists so very convenient if that’s what you’re looking for. Otherwise I would plan the trip myself and travel at my leisure. If you have a rail pass like the Swiss Travel Pass (https://www.myswissalps.com/travel-ticket/swiss-travel-pass/), you can take any train including the GoldenPass to Gruyeres and Broc. Admission to the cheese dairy in Gruyeres (https://www.myswissalps.com/activity/la-maison-du-gruyere/) and the chocolate factory (https://www.myswissalps.com/activity/maison-cailler/) in Broc is free with the STP.

Further to Anna’s reply I would stress that the Swiss Travel Pass is a PUBLIC TRANSPORT pass, valid on buses, boats and tram/streetcars, as well as trains. It follows that the regular scheduled bus which runs hourly from Broc to Gruyeres is free with the STP.
