This hike from Mürren to Kandersteg via Griesalp is a popular section of the Via Alpina trail. Since you are planning a 3-day hike, I would choose either staying in Rockstockhutte or Obersteinberg for the the first night. Then continue from Rockstockhutte/ Obersteinberg to Griesalp the next day, and the following day to Kandersteg.
Alternatively, if you want to maintain your booking, you could do Mürren-Rockstockhutte on the first day, Rockstockhutte to Obersteinberg on the second day and finally on the 3rd day hike to Griesalp. From Griesalp, I suggest you travel by public transport to Kandersteg or add another day to your itinerary if you want to hike the trail.

I have gone on multi-day (as much as 12 days!) hikes in the Lauterbrunnen, Griesalp, Kandersteg area several times, over the past few years. The hike from Mürren to the Obersteinberg hotel is absolutely breathtaking!!! The ‘hotel’ is so quaint and charming! However, from the Obersteinberg Hotel, I don’t believe that you can easily climb up to cross over towards the Griesalp area. Instead, going from Mürren, to the Rotstock hut (one of my favorites!! It is so rustic!) then up over the stunning Sefinenfurgge pass is a fabulous hike. Once up on the Sefinenfurgge pass, you can select whether you want to go down to Griesalp (a quiet and beautiful tiny hamlet of farms and small hotels) or to the Gspaltenhorn hut. The Gspaltenhorn hut, at 2,400 m, has breathtaking views!! If you sleep there, you could then hike down to Griesalp, followed by public transportation to Kandersteg. Depending on how much time you have, if you sleep in Griesalp, then the hike over the steep but amazing Hohtürli Pass can utlimately bring you to Kantersteg.
There are so many options! Have fun planning what will surely be 3 fantastic days of hiking!
