Nice to hear you’re coming along to Switzerland.
Spontaneously I would recommend Mount First instead of Schilthorn, simply because of the elevation, meaning it’s lower than the Jungfraujoch and the Schilthorn and will thus offer you more variation of your trips. Additionally you can do quite some fun activities on Mount First, which again is a plus. But of course the Schilthorn is also very spectacular in it’s way.

You could do neither.
Although the above is not a concept readily accepted on this site, it is a plausible option. Going up to the ‘top’ of everything isn’t necessarily the best form of mountain tourism. Being ‘among’ mountains and looking up to peaks can be as rewarding as looking down from them (you can do that in a plane…).
Remember that the term Alp refers to the green pastures ‘between’ mountain peaks, not the mountains themselves

Note that the Schilthorn is free with the Swiss Travel Pass, so that’s another advantage (see Steph’s links).
