Hello kblaisel,
As you will have noticed, not many visitors of this forum can help you with your questions.
May be this website http://www.viaferrata.org/c2suisse_E.html can be a starting point?

In Grindelwald there’s a great route above Grindelwald First. It’s a day route using the lift but it’s a fair walk in and out.
Over in Zermatt there’s loads, some high mountain where you’ll need to stay at a hut.
Gear should be available for rent. You need a via ferrata set, a harness and slings won’t suffice and would be lethally dangerous. Helmets are required and some fingerless gloves are essential as you’re grabbing metal.
Via Ferrata’s are dangerous and some are in a high alpine setting so some caution is required, if in doubt use a local guide.
We’ve a new guidebook for Switzerland listing all the routes, it’s in German but the topo’s are good enough. Probably not available outside Switzerland.
