You’d need to leave around 0830hrs and come back on one of the trains around 1700/1800hrs. That would give you around 5-6 hours in Milan.
Shortest journey is 3hrs 23mins, it’s 3hrs 50 on the return. So you’re looking at nearly seven hours of travel… It’s possible though!

Yes, Zermatt – Milan is OK as a day trip. I have done many days trips over the years from Geneva to Milan. The only difference for you would be the need to change trains at Visp or Brig into the direct Geneva – Milan trains . Best outward connection looks like the 08.13 from Zermatt, changing at Brig onto EC37 arrive Milan 11.37
Beware that you need reservations if travelling internationally (ie cross border) on the Geneva – Milano EC trains
Frontier checks normally fairly low key, but may depend on your nationality
incidentally you can even get to Venice and back in 1 day with around 3.5 hours in Venice…
