You can make reservations for the Golden Pass Line (http://www.myswissalps.com/go ldenpass) including seat selection at /goldenpass/tickets. Click the “e” for English language top right of the page. (where it says “Sprachwahl: d i f e”). Then change the class of travel, date of travel and start/end points to suit. Reservations are not compulsory but are recommended on the Zweisimmen to Montreux leg (which is where the Panoramic and Belle Époque trains operate) during peak tourist season.
It’s possible the booking site is suffering from the annual change of timetable blues.
You don’t need seat reservations from Interlaken to Zweisimmen and even from there to Montreux reservations are not mandatory and most likely unnecessary at that time of year.

I had same problem today for the same trip in reverse. I also read that you can’t book more than 2 months in advance. I was able to check out the trains for December 18 (today is October 19), but not to December 21st, which is my trip date. I’m going to try again in a couple of days. As that part of the trip is relatively short, and the Historic train cars aren’t running, I was thinking that the type of car I sit in is less important than the view from the window… any window works for me. All trains take the same track.

I’m not sure which website you are using to arrange for your reservations, but it may be the Golden Pass website that didn’t adjust yet to the new timetable that was published a few days ago. You can give it a try within a couple of days. However, there are alternatives. You’ll find several options linked to at http://www.myswissalps.com/go ldenpass/tickets, and most of them allow booking as far as 3 months ahead, or even earlier. HappyRail is a good example: https://www.happyrail. com/en/pass/europe/swi tzerland/passholder-fares-golden-pass. I can enter bookings Zweisimmen-Montreux (the leg Interlaken-Zweisimmen is usually not reserved for) for Decmber 16 as well as December 18. Also, note that seat reservations for the Golden Pass are not obligatory. You may also just hop on and off with a valid ticket or rail pass.
