From your question I understand you are going to use a Swiss Pass? In that case you can travel wherever you want and whenever you want.
A Swiss Pass is valid in scenic trains as well, but for most scenic trains reservations will be necessary and that will cost you a bit more. For questions like these you will probably find answers to your questions on the Railway FAQ

You are probably referring to the the Golden Pass Line
between Montreux and Lucerne, from there you could end up in Zürich. With a valid Swiss Pass a return journey will be covered.
