Hi Anomaly14 -used o get around Switzerland,
As long as you are considering mainline and secondary trains, they all run every day of the year. Mountain transport may have special or varied schedules, so for those. pick your place for start and finish and check the timetable linked by Anna.
This version of the time table allows you to search by place, such as Riddes:

I find it very useful for planning for a particular place, as it will tell all of the trains that serve that place. It does buses and lakeboats, too..

Riddes is a local station on the Valais (Genève – Brig) main line between Martigny and Sion, served by local ‘RegionalAlps’ multiple unit trains on the service St Gingolph/Monthey – Brig. It runs every hour weekends , every half hour Monday – Friday. You can take this regional train and change into a faster train at Martigny or Sion, or stay on the local train if you are not pressed for time and/or want to to get a ‘local’ travel experience
Zurich – Praha daily after March 2020 as far as I know.
