Zermatt has a huge number of lovely restaurants. I’ve never had a bad experience so I suggest you contact ones that seem nice and go from there.

If you like a cozy, rustic atmosphere, this is one of my favorite places to dine in Zermatt. However, you’d need to ask about their plans for NYE since I’ve never been there on a big holiday like NYE,and I’m not sure if it would be open or available to guests not staying at their hotel. http://www.julen.ch/en/restaurant-schaeferstube/
