Do I understand that this is a day trip from Milan?
There is no problem taking regular trains on the Bernina Railway Tirano to St Moritz. Trains run regularly and offer the exact same views as offered by the Bernina Express.
Don’t worry about the prospect of St Moritz being bleak. You might pick a fantastic sunny day.
You can get from Milan to Zermatt and see the Matterhorn in 3 and a half hours one way so that’s an alternative for you.

The alternative to the Bernina Express is the Bernina Express!
It is important to understand the difference between the ‘Bernina Express’ and the ‘Bernina Railway’. The Bernina Railway is the (originally independent) railway line from Tirano – St Moritz – Tirano. It became part of the Rhätische Bahn* (RhB) in 1943.
The Bernina Railway itself does not connect to Chur
It has regular ‘normal’ train services

You don’t need them as the normal coaches give the same views, but panoramic coaches are attached to some ordinary trains in the off season, for example the 09.41 from Tirano

So if a specific train doesn’t run because of low season, regular trains will usually be available, allowing you to still enjoy the route.
