I happened to make a dummy booking for the GoldenPass Panoramic and the GoldenPass Express trains yesterday, and the systems seem to be glitching at the moment. I expect this to be solved over the next weeks: the systems will be updated for the new Swiss timetable, which comes into effect by mid-December. So you can best try again in one or two weeks.
For both of these trains, the travel direction is usually indicated by arrows, so you can choose which side of the train you’re on. The best sides for each stretch are explained at https://www.myswissalps.com/activity/goldenpass/#directions
Reservations for the Belle Époque trains are already possible.
