Given the price of eating out, we will be eating in a lot on our trip – does anyone have recommendations for good butchers in Grindelwald, Vevey and Zermatt where we might be able to get nice local sausages or other Swiss specialties?

I unfortunately can’t recommend one specific butcher in the areas you mentions, but I can assure you that meat generally, even the one you get in supermarkets, is normally of very good quality and often local as they support local production.
You will find fresh meat counters in all larger supermarkets and also some local butchers.Maybe someone else has a must-go he knows.
