There are some luxury options in both towns – see a hotel list for Grindelwald here and Interlaken here.
I would normally recommend looking at a small town like Grindelwald or Wengen over Interlaken usually. You will be closer to the hikes and the town(s) is more charming. Interlaken can get quite touristy and is a big advantage mostly when you need a good rail connection to other towns/regions.

I agree that staying in Grindelwald or one of the other Jungfrau region villages would be better than staying in Interlaken.
Before booking, look up the address of the hotel on Google Maps and see how close it is to transport: train or bus in Grindelwald, train in Wengen, and train or cable car in Mürren. Many hotels also offer a station pick-up and drop-off service on your days of arrival and departure, so that is worth checking as well.
Grindelwald buses run until about 6-7pm.
