The end of May will be already better and a bit warmer than during winter, but there will be probably still snow above (1800 – 2000 m). In Zurich it will be already spring but at the Jungfraujoch there will be still winter. Note, that the weather may change easily in May, I would also expect some rain.

8-19 degrees for the Interlaken region is reasonable. But if you go up higher it will be colder. (Grindelwald, Lauterbrunnen end especially at Jungfraujoch.) During daytime it will be warmer while for the night it gets colder. Also the sun will have already force, to make sure to have some against sunburn for the mountain trips (for your face).
