Here is a bit more information.
The train which Annika mentions departs from Track #4. That information is in the timetable which Annika mentions:
That time table tells you the track number for your train. You should be able to use it to learn which track your incoming train arrives on. Some TGV trains and trans-Europe trains continue to Interlaken Ost from Bern.
Most station services are not open at 24:00. The ticket office open at 0615.
You will arrive at Interlaken Ost at 00:59, if you catch the 00:08 train. Will your hotel reception be open then?
You have a good chance to make the connection if your train is not late. If it is a long distance train from other countries, that is not always true.
To make a difficult connection in Bern, it would be good to have light baggage and get off the incoming train near the middle of the train. The tracks at Bern to not end in the station, as they do in many stations. So, the long trains usually stop with the middle cars nearest the underground connecting passage. Really short (local )trains with only 2 to 4 cars may not do that, but the long trains generally do. So, moving to the first car does not usually help at Bern.
