Here’s one option if you have the time, as this will take you about 5 hours instead of 3.5 hours with the fastest connection.
Route: Zermatt to Zurich via Kandersteg. You have to switch trains 3x. First in Visp, then at Brig. In Brig, take the Regio Lotschberger to Bern. In Bern, switch to the train for Zurich.
