From Varenna to Milan you’ll want a regional train ticket to Milan. From Milan try to connect the a EuroCity (EC) train through to Spiez for change to Interlaken.
Use http://www.trenord.it/EN/ for Varenna to Milan and SBB for balance of trip Milan to Interlaken Ost.
If you have a Swiss Travel Pass you only need a ticket Milan to Domodossola.
Another more scenic though longer alternative would be to train to Tirano and follow the Bernina Express route to Interlaken via Chur.
