I’m not sure what you mean by Day Tours. Do you mean guided trips? I would recommend to travel on your own with the mentioned pass. That way you can decide where to go and how long you stay, instead of being restricted to a fixed program.
Day 2 isn’t really doable. Just the trip from Zurich to the Jungfraujoch is 4.5 hours one way, so there is not a lot of time left to see anything else that day.
