Along the way make a stop at Giessbach, have lunch at the Grand Giessbach Hotel and hike to the Giessbach waterfalls. Later, upon returning to Interlaken Ost, take the funicular to Harder Kulm (https://www.myswissalps.com/activity/harder-kulm/) where you can enjoy a panoramic view of Interlaken. There is also a restaurant and a playground at the top.
