Without knowing where else you have been prior to Zermatt, or how much time you have available I would say the most scenic route would be via Kandersteg and Zweisimmen.
You will then travel between Brig and Spiez on the Regio-Express Lötschberger train over the traditional, more than 100 year old mountain route, giving you a wonderful view along the impressive peaks and down into the Rhone Valley. And on the Golden Pass Line (http://www.myswissalps.com/go ldenpass) between Spiez and Montreux.
The above route will take close to 8 hours, the most direct route under 4 hours.

The ordinary route from Zermatt to Genève is quite scenic. Even though the railway from Visp follows the Rhone Valley, there are mountains rising up on either side, and when you get west of Aigle it starts running alongside Lake Geneva (sit on the left)

Thank you Rockoyster and 1960 Man. That was both the exact info I needed. We are an older couple loving hiking 4 days in Lauterbrunnen and 4 days in Zermatt. Our 2 days in Zurich was delightful for getting over jet lag. We wish we hadn’t booked so much time in Geneve 5 nights but These old bones probably need a rest

There is plenty to do in and around Genève, and if you still have a valid rail pass, quite a few excursions are possible from Genève. (indeed Zermatt is a day trip destination from Genève!)
Use the timetable link from Rockoyster to plan out any day trips you think you might like: Montreux, Zermatt, Bern, Neuchatel. There are very good train connections from Geneva depending on how much travel you may want to do in one day.
