After you decide on specific dates for various locations, double check on that. A car is almost useless in the Jungfrau region. You will use it to drive to Lauterbrunnen or Grindelwald ( 20-30 minutes) and park it. At least parking is pretty cheap, in contrast to the main cities where parking is quite expensive.
There are car rental offices in Interlaken.
Of course, with a lot of kids, you have to buy a lot of tickets, but only rent one car. 😉

I would not rent a car for a stay in Interlaken. It’s the transport hub of trains, buses and boats in the Bernese Oberland. You can go anywhere with public transport, but a car does not get you far in the Jungfrau region. Furthermore, children travel along for free with the Swiss Half Fare Card and for just CHF 30 per child in case of the Regional-Pass Bernese Oberland.
