Perfectly doable (but it’s InterLAKEN). 😉
You’ll want to go up via Grindelwald and down via Wengen if you want to do the Lauterbrunnen valley later in the day. The Trummelbach Falls are worth a look. You can walk there from Lauterbrunnen and get a bus back or vice versa.

I have never been to Jungfraujoch and don’t have any intention of doing so. Too expensive and commercialised for my tastes. It is highly promoted so ends up on the bucket list for most tourists. Schilthorn is a different but better experience in my view.
You don’t say if you are planning on public transport all the way or if you have a car.
Here’s a suggestion . . . . From Lauterbrunnen a very nice circuit to do is to Grütschalp (cable car), Mürren (train), Gimmelwald (cable car), Stechelberg (cable car), Lauterbrunnen (bus). From Mürren you can easily visit Schiltorn (don’t miss The Thrill Walk at Birg) and even Allmendhubel if you have time. In between Stechelberg and Lauterbrunnen the bus stops at the Trummelbach Falls. Well worth a look. The entire circuit and side trips are free with the Swiss Travel Pass in 2019 apart from the Allmendhubel Funicular (50% discount) and the Falls (modest entry fee).
Use the timetable on the SBB website (bit.ly/2HH1U7B) or the highly-recommended SBB Mobile app (bit.ly/2ICIUHi) to plan your travel, find fares* and buy tickets if required. Wow! Great detail! Thank you! Leaning towards Schilthorn now. I have an EUrail pass, because we are also spending 2 weeks in Italy. Can I get discounts with that, or should I also have a Swiss Travel pass?

The Eurail Pass only gets you 25% discount on anything south of Interlaken in the Jungfrau Region.
It’s unlikely a Swiss Travel Pass on top of a Eurail Pass would make sense.
Based on your personal itinerary you should read “How to choose the best travel pass” (http://www.myswissalps.com/tr ain/ticketspasses/prac tical/chooserailpass), download the handy spreadsheet calculator and do the math. The spreadsheet also includes links to the “Where it’s valid” page for all available passes. Be sure to check those pages for each pass you are considering. Study the map AND read all the text on those pages to fully understand what is covered by the respective pass.

We did both and preferred Schilthorn. Also if you go early in the morning, you get addirional discounts. It is less commercial, the views are incredible, less time consuming, and many other stops along the way . They’re was even a band playing traditional music and a spontaneous dance party. No need to eat at the roatating restaurant… other food options all reasonably priced. Take in Trummelbach Falls on the way back. All accessible by excellent bus system.
