The true answer to your question is that neither Golden Pass not Glacier Express suits your stated itinerary at present. To fit any of the two in to your plan, you would have to change your itinerary quite a lot. However I can’t help completely as you haven’t said where your trip starts.
Strictly speaking it is not necessary to use either train ‘just because they exist’. You will see just the same sort of high mountain scenery from local trips around the Interlaken and Luzern areas.
Here are three possible choices of plan for you:
1) stick with your current plan and see Jungfrau region from Interlaken base (lots of high mountains from various railways and cable car routes); and the same from Luzern base (Titlis, Pilatus, Rigi)
2) go Interlaken – Golden Pass – Montreux – Bern – Zurich
3) go Interlaken – Spiez – Brig – Glacier Express route – Chur – Zurich

Hi Penny29, welcome to MySwissAlps!
If Interlaken (https://www.myswissalps.com/interlaken) and Lucerne (https://www.myswissalps.com/lucerne) are your base towns, the GoldenPass is the more obvious choice. The northern leg, called “Luzern-Interlaken Express”, connects Interlaken and Lucerne, so you can do that segment when transferring from one town to the other. You could then make an additional day trip toward Montreux in a GoldenPass Panoramic or GoldenPass Belle Époque train while staying in Interlaken. Please find all information at https://www.myswissalps.com/goldenpass, and a description of the route https://www.myswissalps.com/goldenpass/gettingthere.
Theoretically you could also make a day trip with part of the Glacier Express from Interlaken. You’ll find a suggestion under ‘Don’t have time to do the full route?’ at https://www.myswissalps.com/glacierexpress. But there’s more than enough closer to Interlaken and Lucerne to enjoy yourself with! Many activity suggestions can be found at https://www.myswissalps.com/berneseoberland/activities and https://www.myswissalps.com/lucerne/activities.
If you actually start planning day trips, the Swiss timetable is great tool. This page explains how it works: https://www.myswissalps.com/timetable.
And one last tip: you’ll very likely save money with a rail pass. Here’s how to find out which one suits your plans: https://www.myswissalps.com/train/ticketspasses/practical/chooserailpass.
I hope this helps you out. Have fun preparing for your trip and let us know if you have further questions!

Thank you for your help! To add on, the trip would start on Zurich – Lucerne – Interlaken – Grindelwald – end at Zurich / Geneva to take the plane.

If you’d end in Geneva, you could do the full GoldenPass route to Montreux (https://www.myswissalps.com/montreux). The Lake Geneva area is beautiful and quite different from Interlaken and Lucerne. If time allows, you could consider spending one or two days there as well: https://www.myswissalps.com/lakegeneva. The logical order would then be Zurich-Lucerne-Interlaken-Lake Geneva-Geneva.
